Lentil Kale Instant Pot Soup

This is a super easy Instant Pot recipe, and is quick to prep and cook. It's delicious choice if you are vegetarian or vegan. Also, enjoyable with a side of chicken if you're an omnivore!
Ingredients:
- 1 cup Lentils 
- 1 bunch Kale (we like Dinosaur Kale) 
- 1 can Kidney Beans 
- 3 stalks of celery 
- 1 sweet potato 
- 1 medium or large onion 
- 3 cloves garlic 
- 2 cups broth of choice (vegetable for vegan) 
- 1 can diced tomatoes 
- 1 tsp Brags 24 spice mix 
- 1/2 tsp salt 
- 1/2 tsp pepper 
- 1 tsp paprika 
- 1 tsp turmeric 
- 2 Tbsp olive oil 

Directions:
- Dice onion, celery, garlic, and sweet potato. 
- Turn on Instant Pot to "Saute" mode. Add olive oil diced onion and celery. saute for a few minutes. 
- Add garlic, sweet potato, and lentils, stir and saute for a few more minutes. 
- Add seasoning: brags mix, salt, pepper, paprika, turmeric and stir. 
- Add liquid: broth and diced tomatoes and stir together. 
- Put on lid, make sure the lever is turned to "Sealing". 
- Switch to "Pressure Cook" mode and change cook time to 16 minutes. 
- When the timer goes off, it's done cooking. Quick release by turning the lever to "Venting", SAFETY FIRST, MAKE SURE TO: cover the lever the a towel so you don't get burnt from the steam. 
- Open lid and mix in chopped kale and the can of rinsed kidneys beans. 
- Let it sit for a 5-10 minutes to allow kale to wilt. 
- Serve and enjoy!
